How many servers are required to set up a domain?

The amount of servers is dependent upon how many users you expect to have. If you have 100 - 200 users, one server should be fine, and no BDC (Backup Domain Controller) is required. However, if you have around 200 - 2500 users, you may need more than one BDC.
